Many have mentioned True Grit. But I'd like to suggest that while that is truly a great western read, it isn't going to be enough to know that one book as a way to know what readers of westerns may want when they come to the library. Certainly they may want something older and traditional, Louis L'Amour, Zane Grey, William Johnstone, Elmer Kelton etc. But it's also very likely that they've already read all of those and are wanting more or something written in the 21st century. A lot western readers read like other genre readers, they consume books at the same rate as romance readers do romances and mystery readers do mysteries.
You might take a look at the Western Writers webpage for some ideas on more contemporary reads.

There are a lot of good possibilities in those lists.
